Pharmacy Dr. Ricardo San Martin: Using nano-emulsions to improve fat encapsulation The Good Food Institute Can nano-emulsions improve fat encapsulation in plant-based meat? Dr. Ricardo San Martin discusses novel approaches to replace saturated fats (e.g. coconut fat) used in the production of iconic plant-based meat products. Dr. San Martin presents preliminary results that show how nanoemulsions allow the use of more healthy oils in the formulation of plant-based meats. This solution reduces oil leakage during cooking, which is an undesirable trait of plant-based burgers. Meet the speaker: Dr. Ricardo San Martin is the Research Director of the Alternative Meat Program at the Sutardja Center for Entrepreneurship and Technology at UC Berkeley, where students explore entrepreneurial opportunities in alternatives to animal products (not just meat). This is a meaningful and complex challenge about which he cares deeply, especially since two of his four children are vegan. He holds a B.S. from Universidad Catolica de Chile in Chemical Engineering, an MSc. in Chemical Engineering from UC Berkeley and a Ph.D. in Biotechnology from Imperial College, London. For over 35 years, he has been a hands-on inventor and entrepreneur on plant-extracts, some of which are used by the companies developing vegan alternatives to meat. His company provides the natural foaming agent for US root beer. View

Pharmacy How to Perform IVIVC for Delayed Release Drug Formulations Certara In vitro-in vivo correlation (IVIVC) is a predictive mathematical tool that describes the relationship between an in vitro property of a drug dosage form and an in vivo pharmacokinetic response. Drug developers frequently use this approach to waive the requirement to show in vivo bioavailability or bioequivalence. In theory, developing an IVIVC is straightforward for immediate release oral formulations. Delayed release drug formulations deliver a drug with a delay after its administration.
