Special Issue Description

Amino acids are organic compounds with amino and carboxylic acid functional groups, as well as a side chain (R group) that is distinct to each amino acid. Carbon (C), hydrogen (H), oxygen (O), and nitrogen (N) are elements found in all amino acids; in addition, sulfur (S) is found in the side chains of cysteine and methionine, and selenium (Se) is found in the less common amino acid selenocysteine. Animal proteins, such as beef, poultry, and eggs, are the best sources of amino acids. Animal proteins are the easiest for your body to absorb and use. Complete proteins are foods that contain all nine essential amino acids. All amino acids are derived from glycolysis, the citric acid cycle, or the pentose phosphate pathway. Glutamate and glutamine provide nitrogen. The formation of the appropriate alpha-keto acid, which is then transaminated to form amino acid, is required for amino acid synthesis. The primary function of amino acids is to serve as protein building blocks. Proteins are typically made up of 50 to 2000 amino acids that are joined end-to-end in a variety of different ways. Each protein has a distinct amino acid sequence in its twisted and folded configuration.
