        Special Issue Description

        Nutrition and diet play a vital role in the health care system. Modern diets with high energy density and low nutrient diversity have been linked to acquired metabolic syndromes. The human diet is made up of a variety of components, including nutrients, which provide the raw materials for multiple metabolic processes in every cell of the body, and non-nutrients. These components and their metabolites can also control gene expression and cellular function through a variety of mechanisms. Some of these elements are beneficial, while others are toxic. According to research, persistent disruption of nutrient metabolism and/or energy homeostasis, whether caused by nutrient deficiency or excess, causes cellular stress, which leads to metabolic dysregulation and tissue damage, and eventually to the development of acquired metabolic syndromes. Extrinsic factors (e.g., food, xenobiotics, environment), intrinsic factors (e.g., sex, age, gene variations), and host/microbiota interaction all influence metabolism, modifying the risk of developing various acquired metabolic diseases. It is also becoming clear that eating diets high in nutrient diversity but low in energy density may be the key to promoting and maintaining optimal health.
