    Fermentation has progressed from its humble beginnings as a technology for household food preservation to sophisticated technology for the industrial-scale production of pharmaceuticals, biochemicals, enzymes, foods, beverages, and food ingredients. Microbiology, biotechnology, process engineering, and process control and instrumentation advancements over the last century have made this possible. While advances in fermentation technology have greatly benefited the pharmaceutical and biotechnology industries, industrial food and beverage fermentation remains a blend of age-old traditions and cutting-edge technological innovations. Consumer megatrends such as healthy (foods for health, natural, clean label) and ethical (plant-based, sustainable, animal welfare) consumption are reviving interest in fermented foods and fermentation technology around the world.

    Fermentation has also emerged as a pivotal technology in the alternative protein revolutions, and as such, it is transforming into a technology for the sustainable production of food ingredients traditionally derived from animal or plant sources. Precision fermentation, in this regard, is at the forefront of this transformation, with enormous potential to improve the sustainability of our food system. This chapter discusses food fermentation, fermentation process design, industrial food fermentation processes, and current food fermentation trends. Current fermentation industry challenges and future research directions are also highlighted.
